started my day early with a trip to the market. it was quiteaction packed when my mother "lost" her purse to a supposed
pickpocket. even though it never really happened, this was a
good lesson that she should always be conscious of her
surroundings. if there really was a pickpocket, she should
know better than to leave her belongings unattended. so while
she has to apply for a new card, i just got my stuff to make
some stock and was on my way home.
this is part 1, making the caramelized onions for the soup.
my mom's mistake was that she never caramelized the onions.
these pictures will show us how its really done.
thats quite a chunk of onions. filled up around half of my
pot. and my pot aint small!
i added some smells into the already delicious mix
almost done. see how reduced the onions are. note that the
sides of the pot are browned not burned. a controlled fire
is a must!
perfectly browned! part one done. time to add the stock
before i simmer.
